  • 1 whole chicken (4-5 lbs)
  • 4 tablespoons butter, softened
  • 4 garlic cloves, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme leaves
  • 1 lemon, quartered
  • 4 carrots, cut into chunks
  • 4 potatoes, quartered
  • 2 onions, quartered
  • Salt and pepper to taste
  • Olive oil for drizzling

👨‍🍳 Instructions:

  1. Preheat oven to 425°F (220°C)
  2. Mix softened butter with garlic, rosemary, and thyme
  3. Pat chicken dry, loosen skin and rub herb butter underneath
  4. Stuff cavity with lemon quarters and extra herbs
  5. Toss vegetables with olive oil, salt, and pepper
  6. Place vegetables in roasting pan, set chicken on top
  7. Roast 20 minutes, then reduce to 375°F (190°C)
  8. Continue roasting 50-60 minutes until juices run clear
